Properties: An endopeptidase extracted from bovine pancreas, white or off-white powder. Soluble in water, insoluble in ethanol, glycerin, chloroform and ether. Isoelectric point pI 10.5. The optimal pH value is about 7.8 ~ 8.5, the pH value is 2 ~ 3 is stable, the pH value above 5 is easy to autodissolve and inactivate, and the pH> 9.0 is irreversible inactivation. Ca2 + has a stabilizing effect on enzyme activity; heavy metal ions, organophosphorus compounds, DFP, and natural trypsin inhibitors have strong inhibitory effects on their activities.
